It’s a fire-led, seasonal experience built around premium ingredients and bold, unexpected combinations that celebrate the best of winter.

Freshwater Crayfish – Burnt Citrus – Wattleseed – Verjuice

Wagyu Over Coals – Noosa Black Garlic – Soy

2GR 9+ Wagyu – Blue Cheese – Onion Jam – Potato – Leek Ash

Champagne – Crème Fraîche – Caviar

Aged Cheddar – Honey – Black Truffle – Rye

Beer – Artichoke – Sunflower

This menu will continue throughout the winter season before evolving into a new experience next season. If you’d like to experience this chapter of Discovery, bookings are available for a limited time.

Dietaries will be accommodated separately.

Complete your dining experience with expertly paired and hard to source wines. Get the whole table talking and explore the relationship between food and wine. 

​Packages include whole bottles of wine, with a minimum purchase of six bottles, so you can choose how many bottles you need for your dinner party. You can even order more and stash them in your cellar to enjoy later.

Additional wines can be purchased by the bottle upon request
